Banana muffin with banana cream filling

Banana cream Filling:
Cream cheese
Powder sugar
One ripe banana
Lemon juice
Yellow food coloring

Blend cream cheese and powder sugar with mixer. Add a teaspoon vanilla. Mix in smashed banana and a squeeze of lemon juice. Drop a couple of drops of yellow food dye. Chill for 15 min. Cut into muffin a desired filling area and fill. You may cut top on the filling.

I made up the filling so I don't know exact measurements. I started with about 3/4 cup cream cheese and continued to add sugar to taste. then added the rest.

Gumbo Butterfly Cookies

TIP: Roll out your dough onto parchment paper and cut out your cookies arranged how you would bake them. Remove the dough around the cut cookies. Slide the paper and your cut cookie shapes onto a backing sheet.

TIP: Use gel food dye. Dip the tip of the toothpick in dye and drag it on the wet royal icing or use a drop of gel on the royal iced cookie and drag through the colored gel drops to make cool swirls.
